Hog Butchering Workshop 101

Sharpen your knife skills & join us at Longhorn Meat Market to learn how to break down a hog, transforming it into roasts, chops, ribs, pork belly and more.

Class will cover:

-basic hog anatomy

-safe handling of meat, knives and butchering tools

-how to break down a whole side of hog into cook-ready cuts of meat

Some of the techniques covered will be:

-Fabricating the shoulder, and leg

-Cutting Chops

-Removing spareribs and bellies

BRING WITH YOU!

Please wear closed-toe shoes
Comfortable clothes
a hat!
Bring a sweater as well.
Knives, cutting apron, and cutting gloves will be provided.

Participants will take home what they work with in class, approximately 20 lbs. of meat! Roasts, chops, ribs, pork belly, etc.

Take-home meat is included in the ticket price!

**Participants will be asked to sign a simple waiver since we will be using sharp objects!**

Meat Your Instructor:

Michael Donnelly began his butchering career by attending culinary school in his home state of New Jersey. After learning more about the beauty of the culinary field, he fell in love with the relationship of food and the journey it takes to find it’s way to the plate. After some thoughtful research, Michael became deeply curious about the world of butchery. He dug in by looking up the top programs in the U.S and learned about Fleishers Craft Butchery. He attended Fleishers’ apprenticeship program, where they only accepted five students a year, and learned all about whole-animal processing and the value of using the entire animal.

After completing his time at Fleishers, Michael moved to Austin, Texas. There he found work at Dai Due Butcher Shop and Restaurant learning from Chef Jessie Griffiths and a team of talented and driven chefs. Starting as a butcher Michael moved up to Head Butcher and then Butcher Shop Manager. Today, Michael works for Whole Foods Market and helps run the meat team in the Cedar Park location. In his free time Michael continues to hone his skills by partnering with local ranchers in Central Texas to provide support for their butchering needs. He lives in Austin with his wife, Cassidy, their cat and dog.
